Balcones, in Waco, won the Best in Glass showdown this year against a Murderers’ Row of old-school scotches. Head Distiller Chip Tate tells us how. “We always do well in blind tastings, when people can’t tell that we’re American or that our stuff is so young. Even though ours doesn’t sit in the barrel for years, we take our time with fermentation—a week instead of seventy hours—and we use expensive custom-built toasted-oak barrels.
